- Chef Ann Cooper
Chef Ann Cooper is a celebrated author, chef, educator and enduring advocate for better food for all children. A graduate of the Culinary Institute of America, Ann has been a chef for more than 30 years, over 15 of those in school food programs. She currently serves as the director of nutrition services for the Boulder Valley School District. Known as the Renegade Lunch Lady, Ann has been honored by The National Resources Defense Council, selected as a Kellogg Food and Society Policy Fellow, and awarded an honorary doctorate from SUNY Cobleskill for her work on sustainable agriculture. In 2009, Ann founded the nonprofit Chef Ann Foundation to focus on solutions to the school food crisis. CAF’s pivotal project is The Lunch Box – a web portal that provides free and accessible tools, recipes and resources to support schools transitioning to scratch-cooked meals made with whole, healthy food. - See more at: Cheff Ann Foundation
- Sandor Katz:
Sandor Ellix Katz is a fermentation revivalist. His books Wild Fermentation (2003) and the Art of Fermentation (2012), along with the hundreds of fermentation workshops he has taught around the world, have helped to catalyze a broad revival of the fermentation arts. A self-taught experimentalist who lives in rural Tennessee, the New York Times calls him “one of the unlikely rock stars of the American food scene.” The Art of Fermentation received a James Beard award, and In 2014, Sandor was honored with the Craig Claiborne Lifetime Achievement Award from the Southern Foodways Alliance. - Jeffrey Callaway
Jeffrey Callaway is the Director of Industry Outreach for the Fermentation Science and Technology (FST) degree program at Colorado State University. His formal education is in Medical Microbiology as well as Food Safety, but his passion for beer, fermented foods, and the rejection of a sterile world led him from working with the “bad bugs” to focus on the “good bugs.” After starting up a biotech company that produced probiotics for cattle, Jeff made his way back to CSU and is using his start-up experience and passion for the fermented food and beverage industry to help launch the new and exciting FST program. - Mike Meader of Full Circle Farms
We currently farm 1,100 acres, which we lease from Boulder County Open Space. The farms are located in Longmont, Colorado with Longs Peak (14, 259 feet) to our west, where the watershed feeds our rivers and reservoirs. Ten farms make up the acreage, each one uniquely different than the others. We grow over 70 varieties of vegetables as well as small grains, grass hay and alfalfa. We utilize the hay and grain crops for rotation to give the soil the needed rest from vegetable production. We utilize every type of irrigation system, including drip, pivot, solid set, and flood. These different systems allow us to conserve and manage our crops with different need. Mike Meader is in charge of greenhouse production, wholesale sales, quality control and food safety. - Helen Dohrman
Helen Dohrman, CN is a Certified Nutritionst and Nutritional Health Coach with Natural Grocers. With over 25 years experience in the Natural Foods Industry, she believes that nutritional needs are individually based and that once identified, can be balanced for optimum vitality. Helen's role as a Health Coach wholly complements traditional health care with an emphasis on diet, supplements, and lifestyle education.
Helen graduated from the Certified Nutritionist program at the American Health Science University and completed advanced postgraduate training from Designs for Health Institute and Crayhon Research in Clinical Nutrition. Drawing on nearly 20 years in the Natural Products Industry, she believes that nutritional needs are individually based and that once identified, can be balanced for optimum vitality.
